- 1 pound lean ground beef
- 1 can enchilada sauce
- 1 tablespoon low fat Mexican cheese
- Package of corn tortillas
- You can make these individually on in casserole
- Brown beef on stovetop and put half a can of enchilada sauce in with the beef
- Coat bottom of sauce, then put tortilla on top. Put 1/2 cup of ground beef on top.
- Then, coat with another tortilla and sprinkle a little cheese on top.
- Brown in oven for about 10 minutes at 350
