Low-Fat Beef Enchiladas


  • 1 pound lean ground beef
  • 1 can enchilada sauce
  • 1 tablespoon low fat Mexican cheese
  • Package of corn tortillas


  • You can make these individually on in casserole
  • Brown beef on stovetop and put half a can of enchilada sauce in with the beef
    • Coat bottom of sauce, then put tortilla on top. Put 1/2 cup of ground beef on top.
    • Then, coat with another tortilla and sprinkle a little cheese on top.
  • Brown in oven for about 10 minutes at 350
