Ham + Cheese Breakfast Muffin Cups


  • 1 cup shredded potatoes or sweet potatoes
  • 12 slices of ham
  • Sprinkle of cheese on top
  • Seasoning of your choice (I use breakfast blend, anything savory will work)
  • 6 beaten eggs + 12 egg whites


  • Line muffin tin with baking cups, arrange ham.
  • Whisk eggs, seasonings, potatoes, pour inside. Then, sprinkle top with cheese.
  • Bake for 25-30 minutes at 375 or until cooked through/puffy.
