- 1 cup shredded potatoes or sweet potatoes
- 12 slices of ham
- Sprinkle of cheese on top
- Seasoning of your choice (I use breakfast blend, anything savory will work)
- 6 beaten eggs + 12 egg whites
- Line muffin tin with baking cups, arrange ham.
- Whisk eggs, seasonings, potatoes, pour inside. Then, sprinkle top with cheese.
- Bake for 25-30 minutes at 375 or until cooked through/puffy.
